What we collect

Only what you give us voluntarily through the forms on this site: full name, phone or WhatsApp number, email address and, where relevant, company, number of guests, preferred date, type of event, indicative budget and any notes you choose to add (for example, food allergies or intolerances).

What we use it for

• Managing your pre-booking or reservation and contacting you to confirm it.
• Preparing a proposal if you request information about a private event.
• Telling you the opening date of the Costa del Este location if you join the opening list.
• Answering enquiries and adapting the service to your dietary needs.

We do not use your data for any other purpose, we do not sell it, and we do not pass it to third parties for commercial purposes.

Legal basis and consent

Processing is based on the consent you give by ticking the corresponding box before submitting any form. You may withdraw it at any time by writing to us.

Technical records

When a form submission fails, we store one line on the server with the date, the type of request and the contact details you gave us, so that we can still get back to you. That record does not include your IP address or the page you came from, and it is reviewed and cleared periodically. To limit automated submissions we store a pseudonymised identifier derived from your IP address using a keyed function, not the address itself. Each record stops counting one hour after it is created and is removed from the file the next time someone submits a form; if no further submissions came in, it could remain stored somewhat longer without being used again.

How long we keep it

We keep your data for as long as needed to handle your request and, in the case of the opening list, until the Costa del Este location has opened or until you ask to be removed.

Health data

If you tell us about food allergies or intolerances, that information is used solely to keep you safe during service and is shared only with the kitchen and floor staff involved.

Your rights

You may at any time request access to, rectification of, erasure of or restriction of the processing of your data, and object to it, by writing to info@santaritapanama.com. We will deal with your request as quickly as we can.

Cookies and measurement

We use Google Analytics 4 to know how many people visit the site, what kind of device they arrive on and which pages they read. For that, Google sets first-party measurement cookies (_ga and _ga_*) which expire after two years and serve only to tell one visit from another. We also record when someone taps a WhatsApp link or a phone number, and where on the page they tap it; what is stored is the fact of the tap, never the content of the conversation or the call.

Google Analytics 4 does not store your IP address: it uses it to infer an approximate location and then discards it. There are no advertising cookies on this site, we do not build profiles, we do not share your browsing with ad networks, and the measurement is not connected to any advertising platform. Event data is retained for fourteen months; after that, Google deletes it automatically.

You can prevent it without losing anything on the site: block this domain's cookies in your browser settings, use its private browsing mode, or install the Google Analytics opt-out add-on. The processing is carried out by Google LLC under its privacy policy.

Third-party services

The site embeds a Google Maps frame on the contact page, which may record your IP address under Google's own policies. The measurement loads a file from Google Tag Manager and sends its data to Google Analytics. Fonts are self-hosted, so no request is made to external font providers. If you write to us on WhatsApp, that conversation is governed by that platform's terms.

Security

The site is served over an encrypted connection (HTTPS) and we apply reasonable measures to protect the information you send us.

Changes

We may update this policy. The version in force is always the one published on this page.
